In 2011, we went to Paraguay to conduct an assessment for potential agricultural collaborations/projects. While there, I learned of chipa and its Guarani/indigenous history. Here are a few photos captured in Asuncion.

Found throughout Paraguay, in every house, on every street corner, along for the ride on every bus, chipa is a doughnut-like cheese bread with a density more like a bagel. Made of manioc flour, and with anise being essential or it’s not chipa, it’s a wonderful little snack.
